Cooking with Cheese

People often ask me, "What should I do with leftover pieces of cheese?" I say, "Eat them!" Of course, that isn't the answer they're looking for, which I understand. I too used to ponder what to do with odd-shaped, small pieces of cheese that weren't nice enough to serve at a party yet seemed too special to eat just any ol' day. The obvious answer is to use them for cooking. Why use ordinary cheeses for cooking when you can elevate your macaroni and cheese or a grilled cheese sandwich to the realm of the extraordinary?
